Anchovy Grilled Salmon Steaks Recipe
This recipe comes from a friend who served this at one of her card parties. It is very flaky, very moist, very tasty and was very popular. Get ready for a nice dinner if you serve this. Yummers.

Ingredients
  • 4 salmon steaks
  • Parsley sprigs
  • Lemon wedges
  • Anchovy butter:
  • 6 anchovy fillets
  • 2 tablespoons milk
  • 6 tablespoons butter
  • 1 drop Tabasco sauce
  • 1/2 teaspoon freshly ground black pepper

Directions
  1. Make anchovy butter by soaking anchovy fillets in milk then mash with spoon until creamy.
  2. Cream anchovies, milk, butter, Tabasco and pepper together and chill.
  3. Preheat grill to high heat then oil grill rack and place each steak to ensure an even heat.
  4. Place a small knob of anchovy butter on each steak and grill 4 minutes.
  5. Turn steaks with a fish slice and place another knob of the butter among the steaks.
  6. Grill on the second side for 4 minutes.
  7. Reduce heat and allow to cook 3 minutes longer.
  8. Serve with a neatly arranged pat of anchovy butter on top of each steak.
  9. Garnish with parsley sprigs and lemon wedges.
