Patina De Piris - Pear Souffle

- 1kg pears (peeled and without core) shopping list
- 6 eggs shopping list
- 4 tblsp honey shopping list
- 100ml Passum* shopping list
- a little bit oil shopping list
- 50ml Liquamen, or 1/4 tsp salt shopping list
- 1/2 tsp ground cumin shopping list
- ground pepper to taste shopping list
- *Passum: Very sweet wine sauce, made by boiling the must (new wine or grape juice) to thicken it. (maybe add honey? - just my guess) shopping list
How to make it
- Mesh cooked pears together with pepper,cumin, honey, Passum, Liquamen and a bit of oil.
- Add eggs and put into a casserole.
- Cook approximately 30 minutes on small to moderate heat.
- Serve with a bit of pepper sprinkled on the souffle.
