How to make it

  • Rice Crust Directions:
  • In small pan combine rice and water and bring to simmer (adding rice to cold water makes rice stickier which is helpful to this recipe). Cover and cook until water is absorbed, about 45 minutes. Cool. Lightly spray a pie pan and press cooked rice into it. Preheat oven to 375 degrees and set aside until filling is ready.
  • Filling Directions:
  • • Wash greens and chop very finely
  • • In skillet, heat olive oil and sauté onion until clear and sweet, add garlic and season with sea salt & cook another minute. Add greens and sauté over medium heat until wilted, tossing with tongs to cook all greens evenly (about 10 minutes)
  • • Remove from heat and add eggs and feta. Mix well.
  • • Scrape into rice crust, smooth the top and sprinkle with nuts.
  • • Cover loosely with foil and bake at 375 for 35- 40 minutes. Remove foil for last 5 minutes of baking.
