Ingredients
  • 1 package (8 ounces) brown-and-serve sausage
  • 1 1/2 cups uncooked instant rice
  • 1 1/2 cups chicken broth
  • 1 teaspoon chopped fresh or 1/4 tsp dried thyme leaves
  • 1/4 teaspoon chili powder
  • 1/8 teaspoon ground red pepper (cayenne)
  • 6 pieces of okra, sliced into coins
  • 1 small green bell pepper, chopped (1/2 cup)
  • 1 small onion, chopped (1/4 cup)
  • 1 (14 1/2-ounce) can stewed tomatoes, undrained
  • 1 (10-ounce) package frozen cooked crayfish tails or shrimp, drained

Directions
  1. Cut sausages diagonally into 1-inch slices. Cook as directed on package using deep 10-inch skillet; drain.
  2. Stir in remaining ingredients. Heat to boiling, stirring occasionally; reduce heat.
  3. Simmer uncovered 10 minutes, stirring occasionally.
