Vegetarian Curry

- 3 medium bananas green tip peeled shopping list
- 1 onion halved thinly sliced shopping list
- 1 apple tart peeled and cored shopping list
- 1-1/2 teaspoons lemon peel grated shopping list
- 1 teaspoon coriander shopping list
- 1/8 teaspoon red pepper ground shopping list
- 1 can kidney beans undrained shopping list
- 1 cup yogurt shopping list
- 3 cups hot cooked rice shopping list
- 3 green onions thinly sliced shopping list
- 1/4 cup peanuts chopped shopping list
- 3 teaspoons margarine divided shopping list
- 2 large garlic cloves pressed shopping list
- 1-1/2 teaspoons curry powder shopping list
- 1 teaspoon ginger ground shopping list
- 1/8 teaspoon turmeric shopping list
- 1 can black eyed peas drained shopping list
- 1-1/3 cup raisins shopping list
- 3 hard cooked eggs halved shopping list
- 6 radishes thinly sliced shopping list
- 1/2 cup cilantro chopped shopping list
How to make it
- Cut bananas in half crosswise then lengthwise to make 12 pieces.
- Sauté in nonstick skillet with 2 teaspoons margarine until lightly browned then remove to plate.
- Add 1 teaspoon margarine to skillet then sauté onion, garlic and apple until soft.
- Combine curry powder, lemon peel, ginger, coriander, turmeric and red pepper.
- Stir into onion mixture then add peas, undrained kidney beans and raisins.
- Cover and simmer 5 minutes then remove from heat and stir in yogurt.
- Place egg halves on rice then surround with sautéed bananas.
- Spoon curry over then top with radishes, green onion, cilantro and peanuts.
