How to make it

  • First warm a little olive oil and butter in your skillet over medium low heat. Slice your peppers and put in warming oil. Turn up the heat to medium and add a little balsamic vinegar and toss.
  • While the peppers are cooking, slice your red onion, green onion, and mushrooms. Add the onions. Add oil and vinegar as required.
  • When all the peppers and onions are cooked, saute the mushrooms.
  • Warm the tortillas in another dry pan.
  • Evenly distribute the ingredients into tortillas, top with pepperoncinis and green onion, and serve.
  • Optional- add cooked rice to peppers and onion in pan.
