Portabella Fajitas

- 1 green pepper shopping list
- 1 red pepper shopping list
- 1 yellow pepper shopping list
- sliced pepperoncini shopping list
- 1 red onion shopping list
- 3 green onions shopping list
- portabella mushrooms shopping list
- olive oil shopping list
- butter shopping list
- balsamic vinegar shopping list
- tortillas- you pick the size shopping list
- cooked rice (optional) shopping list
How to make it
- First warm a little olive oil and butter in your skillet over medium low heat. Slice your peppers and put in warming oil. Turn up the heat to medium and add a little balsamic vinegar and toss.
- While the peppers are cooking, slice your red onion, green onion, and mushrooms. Add the onions. Add oil and vinegar as required.
- When all the peppers and onions are cooked, saute the mushrooms.
- Warm the tortillas in another dry pan.
- Evenly distribute the ingredients into tortillas, top with pepperoncinis and green onion, and serve.
- Optional- add cooked rice to peppers and onion in pan.
