Sliced Chicken And Vegetables Recipe
SLICED CHICKEN AND VEGETABLES This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Crawford Estate in Quinlan, Texas in 1982.

Ingredients
  • 1/2 pound string beans cut into 1/2” pieces
  • 3 tablespoons oil or fat
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 pound cooked chicken cut into thin slices
  • 1/4 pound fresh mushrooms sliced
  • 1 cup celery diced
  • 1 cup cabbage cut into 1/4” pieces
  • 1 cup chicken broth
  • 2 tablespoons cornstarch
  • 2 teaspoons soy sauce
  • 1/4 cup hot water
  • Hot boiled rice

Directions
  1. Cook string beans in boiling water until tender.
  2. In a preheated frying pan place oil, salt and pepper.
  3. Add cooked chicken, mushrooms, celery, cabbage and chicken broth.
  4. Cover pan tightly and cook over a moderate flame for 5 minutes then add string beans.
  5. Blend together remaining ingredients and add to chicken and vegetables.
  6. Cook a few more minutes stirring constantly until juice thickens and mixture is very hot.
  7. Serve immediately with hot boiled rice.
