Minnesota Rhubarb Dessert Recipe
This is a recipe from my grandmother. The first time she made this I knew I HAD to have this recipe. She usually makes a wonderful rhubarb pie, but this was even better than her pie.

Ingredients
  • CRUST:
  • 1 1/4 cups flour
  • 1/2 Cup butter
  • 2 Tablespoons sugar
  • 1/4 teas. salt
  • FILLING:
  • 4 egg yolks
  • 1 1/2 cups sugar
  • 2 Tablespoons flour
  • 1/3 cup thin cream
  • 4 cups rhubarb, cut fine
  • MERINGUE:
  • 4 egg whites
  • 8 Tablespoons sugar

Directions
  1. For crust:
  2. Mix flour, shortening, sugar and salt. Press into a greased 9x13 pan. Bake 15 minutes in 325 degree oven.
  3. For Filling:
  4. Beat egg yolks. Mix sugar and flour and add to egg yolks. Add cream and rhubarb. Spread over cooked crust. Bake 40 minutes in a 325 degree oven.
  5. For meringue:
  6. Beat egg whites until they form stiff peaks. Add sugar. Spread meringue over hot filling. Return to 325 degree oven for 8-10 minutes more.
  7. Cool completely and serve!
