Minnesota Rhubarb Dessert Recipe

Ingredients

CRUST:

1 1/4 cups flour

1/2 Cup butter

2 Tablespoons sugar

1/4 teas. salt

FILLING:

4 egg yolks

1 1/2 cups sugar

2 Tablespoons flour

1/3 cup thin cream

4 cups rhubarb, cut fine

MERINGUE:

4 egg whites

8 Tablespoons sugar

Directions

For crust:

Mix flour, shortening, sugar and salt. Press into a greased 9x13 pan. Bake 15 minutes in 325 degree oven.

For Filling:

Beat egg yolks. Mix sugar and flour and add to egg yolks. Add cream and rhubarb. Spread over cooked crust. Bake 40 minutes in a 325 degree oven.

For meringue:

Beat egg whites until they form stiff peaks. Add sugar. Spread meringue over hot filling. Return to 325 degree oven for 8-10 minutes more.

Cool completely and serve!
