Minnesota Rhubarb Dessert

- CRUST: shopping list
- 1 1/4 cups flour shopping list
- 1/2 Cup butter shopping list
- 2 Tablespoons sugar shopping list
- 1/4 teas. salt shopping list
- FILLING: shopping list
- 4 egg yolks shopping list
- 1 1/2 cups sugar shopping list
- 2 Tablespoons flour shopping list
- 1/3 cup thin cream shopping list
- 4 cups rhubarb, cut fine shopping list
- MERINGUE: shopping list
- 4 egg whites shopping list
- 8 Tablespoons sugar shopping list
How to make it
- For crust:
- Mix flour, shortening, sugar and salt. Press into a greased 9x13 pan. Bake 15 minutes in 325 degree oven.
- For Filling:
- Beat egg yolks. Mix sugar and flour and add to egg yolks. Add cream and rhubarb. Spread over cooked crust. Bake 40 minutes in a 325 degree oven.
- For meringue:
- Beat egg whites until they form stiff peaks. Add sugar. Spread meringue over hot filling. Return to 325 degree oven for 8-10 minutes more.
- Cool completely and serve!
