How to make it

  • For crust:
  • Mix flour, shortening, sugar and salt. Press into a greased 9x13 pan. Bake 15 minutes in 325 degree oven.
  • For Filling:
  • Beat egg yolks. Mix sugar and flour and add to egg yolks. Add cream and rhubarb. Spread over cooked crust. Bake 40 minutes in a 325 degree oven.
  • For meringue:
  • Beat egg whites until they form stiff peaks. Add sugar. Spread meringue over hot filling. Return to 325 degree oven for 8-10 minutes more.
  • Cool completely and serve!

    I was looking for rhubarb recipes this morning (just finally found some at our farmer's market) and came upon this - as a MN girl myself (I still call myself that even though I haven't actually "lived" there for almost 40 years...), I knew this one had to be a winner!!! those meringue rhubarb combos - this sounds wonderful. Thanks!
