Meatloaf Recipe
This is a spicier version of grandma's bland meatloaf. My friends couldn't figure out what made it so good!

Ingredients
  • 1/2 cup milk
  • 4 slices sandwich bread torn into pieces
  • 3 pounds ground sirloin
  • 2 small onions, finely chopped
  • 3 garlic cloves, minced
  • 1/2 cup favorite barbecue sauce, plus 1/4 cup for glaze
  • 1 tablespoon parsley
  • 1/2 cup grated jalepeno cheese
  • 2 large eggs, lightly beaten
  • salt and pepper

Directions
  1. Preheat oven to 350, with rack in center.
  2. In a large bowl, pour milk over bread and let soak about 30 seconds.
  3. Add sirloin, onion, garlic, 1/2 cup barbecue sauce, parsley, jalepeno cheese, eggs, salt and pepper. Using your hands, mix until combined; do not overmix or meatloaf will be too dense. Divide mixture in half.
  4. Gently pat each half in a log and place each in an 8 1/2 by 4 1/2-inch loaf pan. Do not press down of into corners of pan.
  5. Bake 50 minutes. Brush tops of loaves with remaining 1/4 cup barbecue sauce; continue cooking untill juices run clear and meat thermometer reads 160 degrees F, about 10 minutes.
  6. Remove from oven; let stand 5 minutes. Turn loaves out of and serve.
