These pancakes are always a hit. Oh, and yes, the ingredient list is correct...there's ony 1/2 cup flour in it

Ingredients
  • 6 eggs, separated
  • 1/2 cup all purpose flour (yes, just 1/2 cup)
  • 1 1/2 cup cottage cheese
  • 1 stick melted butter
  • 4 T sugar
  • 1/2 t salt
  • 2 T grated lemon or orange rind

Directions
  1. Beat egg whites until they hold a stiff peak.
  2. In another bowl, mix together remaining ingredients.
  3. Fold egg whites into mixture.
  4. Spoon on to griddle, flipping when done on the first side.
  5. Add syrup and enjoy!
