How to make it

  • Grate the raw potatoes on a rough grater, squeeze and pour excess water away. Season with salt, pepper and marjoram (depends on how salty you like it as potatoes are very salt thirsty), then add plain flour and with a fork mix all the ingredients well together. You need to end up with a mixture that is not runny.
  • If having as a main meal, prepare your sauce before you fry.
  • Heat up oil (if you want a healthy option, only use a about 1/2 cm oil on a non stick pan. Scoop the mixture into hot oil and form a round pancake of about 1 1/2 cms thick. My preferred size is a size of a womans palm, you can make them across the whole frying pan just be careful to turn over.
  • You will need to fry on each side until gold and crispy, on medium heat.
  • My favourite way of serving is to have 2 pancakes to a person, put 1 cake on a plate, top with some of your sauce, place 2nd pancake on top and then top with sauces and salad! This will look like a masterpiece on your guest's plates!

    I love raw potato pancakes. Very nice. the garlic and herbs are really nice. My kidswill eat anything golden crispy. We do like it.
