How to make it

  • In skillet cook bacon till crisp, drain, reserving drippings in skillet
  • Crumble bacon and set aside.
  • Run hot water over frozen brussels sprouts in a colander till separated
  • Drain and halve brussels sprouts, set aside
  • Cut chicken breasts into 1/2 inch wide strips. Season with salt and pepper
  • In reserved drippings in the skillet cook chicken strips and chopped onion over medium-high heat for 4 to 5 minutes or just till chicken is done
  • Stir in brussels sprouts, lemon juice, 1/2 tsp salt, basil and 1/8 tsp pepper
  • Reduce temperature to medium-low
  • Cover and cook for 6 minutes
  • Stir in tomatoes and crumbled bacon
  • Cook, covered, 1 to 2 minutes more

    Ooooh! I love brussells sprouts too! My husband always makes a face when I cook them, but I think he just may like this dish. I know I will! Thank you Kimmer.
