Chicken and Vegetable Skillet Dinner

- 2 slices bacon shopping list
- 1 10oz package frozen Brussels sprouts shopping list
- 2 chicken breasts (medium size) shopping list
- 1 small onion, chopped shopping list
- 1 tsp lemon juice shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp dried basil, crushed shopping list
- 1/8 tsp pepper shopping list
- 2 medium tomatoes, sliced and quartered shopping list
How to make it
- In skillet cook bacon till crisp, drain, reserving drippings in skillet
- Crumble bacon and set aside.
- Run hot water over frozen brussels sprouts in a colander till separated
- Drain and halve brussels sprouts, set aside
- Cut chicken breasts into 1/2 inch wide strips. Season with salt and pepper
- In reserved drippings in the skillet cook chicken strips and chopped onion over medium-high heat for 4 to 5 minutes or just till chicken is done
- Stir in brussels sprouts, lemon juice, 1/2 tsp salt, basil and 1/8 tsp pepper
- Reduce temperature to medium-low
- Cover and cook for 6 minutes
- Stir in tomatoes and crumbled bacon
- Cook, covered, 1 to 2 minutes more
