Chicken And Vegetable Skillet Dinner Recipe

Ingredients

2 slices bacon

1 10oz package frozen brussels sprouts

2 chicken breasts (medium size)

1 small onion, chopped

1 tsp lemon juice

1/2 tsp salt

1/2 tsp dried basil, crushed

1/8 tsp pepper

2 medium tomatoes, sliced and quartered

Directions

In skillet cook bacon till crisp, drain, reserving drippings in skillet

Crumble bacon and set aside.

Run hot water over frozen brussels sprouts in a colander till separated

Drain and halve brussels sprouts, set aside

Cut chicken breasts into 1/2 inch wide strips. Season with salt and pepper

In reserved drippings in the skillet cook chicken strips and chopped onion over medium-high heat for 4 to 5 minutes or just till chicken is done

Stir in brussels sprouts, lemon juice, 1/2 tsp salt, basil and 1/8 tsp pepper

Reduce temperature to medium-low

Cover and cook for 6 minutes

Stir in tomatoes and crumbled bacon

Cook, covered, 1 to 2 minutes more
