Ingredients
  • 2 c sugar
  • 1.5 c vegetable oil
  • 4 eggs, lightly beaten
  • 2 c flour
  • 2 t baking soda
  • 2 t ground cinnamon
  • 3 c (12 ounces) grated fresh carrots
  • 1 c (4 ounces) chopped pecans
  • extra pecans for topping
  • cream cheese frosting

Directions
  1. Preheat oven to 350 degrees.
  2. Grease a glass 13 x 9 inch pan. Three layer cakes or cupcakes may also by used.
  3. In large bowl, whisk together sugar and oil.
  4. Add beaten eggs and whisk to mix.
  5. Stir in flour, baking soda and cinnamon.
  6. Fold in carrots and pecans.
  7. Pour into pan.
  8. Bake 40 minutes or until toothpick inserted into center of cake comes out clean.
  9. One cooled, carefully remove cake from pan and ice cake with cream cheese frosting and adorn with pecans.
