Apricot Sherbet

- 1 17 ounce can apricots shopping list
- water shopping list
- juice of 1 lemon shopping list
- 1 cup sugar shopping list
- MAY DOUBLE THE RECIPE shopping list
How to make it
- Process the apricots, (do not drain) then measure, set aside
- Into a saucepan, measure amount of water *equal* to the amount of apricots
- Add sugar to the water and simmer for 10 minutes
- Add to apricots, add lemon juice
- Mix well and pour into a safe-for-freezer dish
- Place into freezer of the refrigerator
- When frozen and ready to serve, spoon into dessert bowls, stemmed glasses, etc.
