Ingredients
  • Mint leaves for garnishing
  • 2 tsp dried shrimp , chopped or Vegetable stock
  • 12 oz Long green Brinjal , sliced
  • 6 oz tofu cut into cubes
  • Make smooth paste :
  • 2 chilli padi
  • 2 garlic
  • 2 corriander stalks
  • 1 s.onion
  • 2 tbsp lime juice

Directions
  1. Heat some olive oil .
  2. Fry the paste high heat one minute .
  3. Add the brinjal .
  4. Cook for 4 to 5 minutes .
  5. Add the tofu and the shrimp / stock .
  6. Cook for 4 to 5 minutes .
  7. Garnish with mint leaves .
