Ingredients
  • 4 cups sugar
  • 2 1/2 cups of water
  • 1 cup wine vinegar.
  • A handful of mint

Directions
  1. Dissolve the sugar in the water.
  2. When it comes to a boil add the wine vinegar.
  3. Simmer 1/2 hour.
  4. Add the handful of mint, slightly bruised.
  5. Remove from fire.
  6. Pour the syrup through a cheesecloth-lined sieve to remove the solid parts of the mint.
  7. Let cool.
  8. Dilute the resulting syrup to taste with ice water (5 to 10 parts water to 1 part syrup).
  9. The syrup stores without refrigeration.
  10. Note: even if you drink this potion warm, it will make you feel cooler in the hot sun, which will encourage you to drink even more water than usual. Which is a good thing.
