How to make it

  • Sift flour once then measure and add baking powder, soda and salt and sift together three times.
  • Cream butter thoroughly then add sugar gradually and cream together until light and fluffy.
  • Add eggs and beat well then add bananas and beat again.
  • Add flour to creamed mixture alternately with milk a small amount at a time.
  • Beat well after each addition until smooth then add vanilla.
  • Bake in two greased square pans at 375 for 25 minutes.
  • Spread lemon filling between layers and frosting on top and sides of cake.
  • To make filling combine sugar, flour and salt in top of double boiler.
  • Add egg, water and lemon juice mixing thoroughly.
  • Place over boiling water and cook 10 minutes stirring constantly.
  • Add rind and butter then cool.
  • To make frosting add orange and lemon rinds to butter and cream well.
  • Add egg whites and salt and blend.
  • Add sugar alternately with fruit juices beating until smooth and right consistency to spread.
  • Add coloring.
