Luscious Banana Layer Cake

- 2 cups cake flour sifted shopping list
- 1 teaspoon baking powder shopping list
- 1 teaspoon soda shopping list
- 1/2 teaspoon salt shopping list
- 1/2 cup butter shopping list
- 1-1/2 cups granulated sugar shopping list
- 1 egg plus 1 yolk well beaten shopping list
- 1 cup banana mashed shopping list
- 3/4 cup milk sour shopping list
- 1 teaspoon vanilla shopping list
- lemon Filling: shopping list
- 1 cup granulated sugar shopping list
- 5 tablespoons cake flour shopping list
- 1/8 teaspoon salt shopping list
- 1 egg shopping list
- 2 egg yolks slightly beaten shopping list
- 2/3 cup water shopping list
- 1/3 cup lemon juice shopping list
- 1 teaspoon lemon rind shopping list
- 2 teaspoons butter shopping list
- orange lemon Frosting: shopping list
- 2 teaspoons grated orange rind shopping list
- 1/2 teaspoon granted lemon rind shopping list
- 3 tablespoons butter shopping list
- 2 egg whites unbeaten shopping list
- 1/8 teaspoon salt shopping list
- 4 cups sifted powdered sugar shopping list
- 1 teaspoon orange juice shopping list
- 1 teaspoon lemon juice shopping list
- orange food coloring shopping list
How to make it
- Sift flour once then measure and add baking powder, soda and salt and sift together three times.
- Cream butter thoroughly then add sugar gradually and cream together until light and fluffy.
- Add eggs and beat well then add bananas and beat again.
- Add flour to creamed mixture alternately with milk a small amount at a time.
- Beat well after each addition until smooth then add vanilla.
- Bake in two greased square pans at 375 for 25 minutes.
- Spread lemon filling between layers and frosting on top and sides of cake.
- To make filling combine sugar, flour and salt in top of double boiler.
- Add egg, water and lemon juice mixing thoroughly.
- Place over boiling water and cook 10 minutes stirring constantly.
- Add rind and butter then cool.
- To make frosting add orange and lemon rinds to butter and cream well.
- Add egg whites and salt and blend.
- Add sugar alternately with fruit juices beating until smooth and right consistency to spread.
- Add coloring.
