Northern Thai Red Curry Paste

An great natural tasting red curry paste from the north.
Ingredients
- 4-6 dried red chillies shopping list
- 2-3 chopped fresh green chillies shopping list
- 2 tbsp. shallots shopping list
- 2 tsp. galangal shopping list
- 1 tsp. kaffir lime rind shopping list
- 2 tsp. chopped garlic shopping list
- 2 tbsp. chopped lemongrass shopping list
- 2 tbsp. chopped ginger shopping list
- 1/2 tsp. roasted cumin seeds shopping list
- 1/2 tsp. roasted coriander seeds shopping list
- 1/2 tsp. salt. shopping list
How to make it
- Put ingredients in mortar and pound with pestle until everything is well ground and mixed. Alternatively you can use a blender.
