Bean Soup Recipe
A great soup to serve in the fall,can be made at anytime. Soup can be easily canned to enjoy later.

Ingredients
  • 1-2 lbs. small navy beans
  • 1 lg. ham bone with meat
  • celery leaves to taste
  • 1 onion,quartered(leeks can be used when in season)
  • 1/2 tsp. garlic
  • 2 tsp. pepper
  • 3 tbsp. salt
  • bay leaves

Directions
  1. Soak the beans overnight in a large pot of cold water;
  2. remove bad beans and any stones.
  3. Place remaining ingredients in another large pot; cover with
  4. water.
  5. Bring to a boil;cover.
  6. Reduce heat to medium;cook for about 2 hrs.
  7. Add beans; reduce heat to low.
  8. Cover;cook for 4-6 hrs. or until the beans are tender.
  9. Ham hocks can be substituted for ham bone.
  10. * If you don't have the time to commit, you can cheat by using a crock-pot on low for the steps after adding the beans.*
