DIABETIC BANANA PUDDING

- 1 2-qt cassrole dish shopping list
- 1-plg. vanilla pudding (sugar-free) shopping list
- 6 med bananas shopping list
- 2 C. graham crackers (unsweetened) shopping list
- 2 eggs shopping list
- 2 tsp. vanilla shopping list
- 3 tsp. sweetner shopping list
- 3 T. butter, melted shopping list
How to make it
- CRUST:
- Take graham crackers curmbs, add 2 teaspoons sweetener and butter. Mix well.
- Place 1/2 cup of crumbs into a 2- quart dish.
- Slice the bananas and place layer on crumbs. Do this till all bananas ore used.
- FILLING:
- Follow directions on the package of pudding
- Separate 2 eggs
- Place yolk in pudding and add 1 teaspoon vanilla
- Place in saucepan and cook over medium heat until it thickens.
- Pour over bananas. making sure mixture.goes all the way down to the crust
- TOPPING:
- Place egg whites in bowl and beat until fluffy.
- Add 1 teaspoon vanilla and 1 teaspoon sweetener. Mix well.
- Put topping over banana pudding.
- Cook in 350 degree oven for 10 minutes or until golden brown.
