Ingredients
  • 1 2-qt cassrole dish
  • 1-plg. vanilla pudding (sugar-free)
  • 6 med bananas
  • 2 C. graham crackers (unsweetened)
  • 2 eggs
  • 2 tsp. vanilla
  • 3 tsp. sweetner
  • 3 T. butter, melted

Directions
  1. CRUST:
  2. Take graham crackers curmbs, add 2 teaspoons sweetener and butter. Mix well.
  3. Place 1/2 cup of crumbs into a 2- quart dish.
  4. Slice the bananas and place layer on crumbs. Do this till all bananas ore used.
  5. FILLING:
  6. Follow directions on the package of pudding
  7. Separate 2 eggs
  8. Place yolk in pudding and add 1 teaspoon vanilla
  9. Place in saucepan and cook over medium heat until it thickens.
  10. Pour over bananas. making sure mixture.goes all the way down to the crust
  11. TOPPING:
  12. Place egg whites in bowl and beat until fluffy.
  13. Add 1 teaspoon vanilla and 1 teaspoon sweetener. Mix well.
  14. Put topping over banana pudding.
  15. Cook in 350 degree oven for 10 minutes or until golden brown.
