MrsLynams Cheater Pot Pie Chicken

- 2-3 bonless / skinless chicken breasts shopping list
- 1/2 bag frozen peas & carrots shopping list
- 1 can cream of chicken soup shopping list
- 2 frozen pie crusts shopping list
- 1 box (of 2) "rolled" pie crusts shopping list
- 1 or 2 tbs. oil shopping list
- 1/4 cup or 1/2 cup milk (depending) shopping list
- salt shopping list
- pepper shopping list
How to make it
- cut chicken into cubes. Place oil in skillet and add chicken (salt, pepper, garlic, etc)
- Remove crusts from freezer, allowing them defrost a bit, while preparing chicken. (I place rolled crusts in the fridge the night / morning before)
- cook chicken until it turns white (done). Place in a medium size mixing bowl. Add the Peas & carrots to the chicken. Pour can of soup in the bowl, adding approx. 1/4 to 1/2 cup of milk . Mix well with spoon, checking desired consistancy. (Too thick? Add more milk)
- Spoon mixture into pie crusts.
- Unroll the "rolled" pie crusts ON to the tops of filled pies. Pinch crust edges together or use a crust roller to remove the excess edges of "rolled" crusts.
- Place in oven & bake @350 deg. for approx. 30 minutes or so.
- WATCH edges! May become to dark before pot pie is finished baking. You can cover the edges of the pot pie with foil til about the last 15-20 minutes of baking.
