Ingredients
  • 1 tablespoon oil
  • 2 pounds baby pork spareribs cut in pieces
  • 1-1/2-cups Granny Smith apples thinly sliced
  • 3/4 cup white onions julienned
  • 1 cup white wine
  • 1 pound sauerkraut rinsed
  • 2 tablespoons caraway seeds
  • 1 tablespoon juniper berries
  • 2 cups chicken stock

Directions
  1. Heat oil in a large heavy pot then season ribs with salt and pepper.
  2. Place in oil and sear on both sides then add apples and onions to pot and cook 5 minutes.
  3. Add wine, sauerkraut, caraway seeds and juniper berries then cook 2 minutes.
  4. Add stock and return ribs to pot then bring to a boil.
  5. Cover reduce heat and simmer 40 minutes.
