Braised Beef Heart Recipe
Where I grew up nothing was wasted. My mom fixed this simple dish after butchering and it got so we could hardly wait for the next butchering. One heart per butchering.

Ingredients
  • 1 beef heart cleaned with all membranes removed
  • 1 cp flour
  • salt and pepper to taste
  • water
  • oil for browning

Directions
  1. Soak cleaned beef heart in vinegar water (1 cp apple cider vinegar to 1 qt. water) about 1 hour
  2. With sharp knife slice heart into 1/2 inch slices
  3. dredge slices in flour
  4. salt and pepper
  5. fry in oil to browned on both sides
  6. reduce heat and cover with water (Jut cover, no more)
  7. simmer about 90 minutes or untill very tender
  8. add a little water as needed
  9. This will make it's own gravy
  10. serve with mashed potatoes and a big green salad. Yumo!!

I love hearts.
I am going to saute up some portabella mushrooms and garlic and add them to the gravy.
