Tomato Bruschetta

- 8 roma tomatoes, seeded and chopped shopping list
- 1/3 c. red onion, chopped shopping list
- 1 c. fresh basil, shredded shopping list
- 1/4 c. extra virgin olive oil + a extra for baguette shopping list
- 1 T. red wine vinegar shopping list
- salt and pepper shopping list
- 1 baguette shopping list
- 2 garlic cloves, peeled and cut in half (for rubbing on baguette) shopping list
How to make it
- Combine tomatoes, red onion, basil, olive oil and vinegar.
- Season with salt and pepper to taste.
- Let rest at room temperature for 30-40 minutes.
- Turn on broiler and slice baguette diagonally into 1/2 in. pieces.
- Broil until tops are lightly toasted.
- Take the bread out of the broiler and brush each top with a bit of olive oil.
- Rub each piece with garlic.
- Top baguette slices with tomato mixture and serve.
