Tomato Bruschetta Recipe

Ingredients
  • 8 Roma tomatoes, seeded and chopped
  • 1/3 c. red onion, chopped
  • 1 c. fresh basil, shredded
  • 1/4 c. extra virgin olive oil + a extra for baguette
  • 1 T. red wine vinegar
  • salt and pepper
  • 1 baguette
  • 2 garlic cloves, peeled and cut in half (for rubbing on baguette)

Directions
  1. Combine tomatoes, red onion, basil, olive oil and vinegar.
  2. Season with salt and pepper to taste.
  3. Let rest at room temperature for 30-40 minutes.
  4. Turn on broiler and slice baguette diagonally into 1/2 in. pieces.
  5. Broil until tops are lightly toasted.
  6. Take the bread out of the broiler and brush each top with a bit of olive oil.
  7. Rub each piece with garlic.
  8. Top baguette slices with tomato mixture and serve.
