Grilled Scallop and Fig Kebabs

- 1/4 cup chopped green onions shopping list
- 3 tbsps. orange marmalade shopping list
- 2 tbsp. soya sauce shopping list
- 1/2 tsp. red pepper shopping list
- 1 large garlic clove, chopped shopping list
- 16 sea scallops shopping list
- 8 cooked figs shopping list
- 2 oranges, quartered shopping list
- 1 tsp. olive oil shopping list
How to make it
- Combine first 5 ingredients in a zip-top plastic bag; seal bag and shake vigorously.
- Add scallops; seal bag and marinatee in fridge 20 minutes.
- Remove scallops from bag, reserving marinade.
- Thread 4 scallops, 2 figs and 2 orange quarters alternately onto each of 4 skewers.
- Prepare grill by pre-heating and coating with olive oil.
- Place kebabs on grill rack, cook 6 minutes or until scallops are done, turning occasionally and basting with reserved marinade.
- Serves 2. Serving size: 2 kebabs. WW points = 9.
