Carrot apple and raisin cake

- 225g/8oz self-raising flour shopping list
- 1/2 tsp baking powder shopping list
- 1/2 tsp salt shopping list
- 1 tsp ground cinnamon shopping list
- 5 tbsp vegetable oil shopping list
- grayed zest of 1 orange plus 4 tbsp juice shopping list
- 140g/5oz light muscovado sugar shopping list
- 140g/5oz finely grated carrot shopping list
- 1 meduim eating apple, peeled, cored and grated shopping list
- 85g/3oz raisins shopping list
- 50g/2oz pumpkin seeds shopping list
- icing sugar, for dusting shopping list
How to make it
- Preheat the oven to 180'c/gas4/fan oven 160'c. Butter a 20cm/8in round cake tin. Mix the flour, baking powder, salt and cinnamon togetherin a large bowl. In a separate bowl mix together the oil, orange juice and sugar
- Add the orange mixture to the flour along with the grated carrot and apple, orange zest, raisins and pumpkin seeds and stir until well mixed. spoon into tin.
- Bakefor 50 minutes - 1 hours, until the cake pulls from the side of the tin. Cool on a rack before removing from tin. Dust with icing sugar and serve.
