Chinese Poached Fish Recipe

Ingredients
  • 1 fresh whole cleaned fresh fish ( like Sea Bass )
  • fresh ginger sliced in thin strips
  • fresh scallions sliced in thin strips
  • 1 cup hot preanut oil
  • soy sauce to taste
  • Lemon slices to garnish.

Directions
  1. Place fish in a pot of boiling water.
  2. Cover and remove from heat
  3. A small fish will take 5 to 7 minutes to poach and a large fish will take 10 to 12 minutes to poach.
  4. Carefully remove fish and drain.
  5. Place fish on swerving platter.
  6. Cover with strips of gonger and scallions.
  7. Pour on hot peanut oil ( which will release flavors of ginger and scallions )
  8. Season with soy sauce ( drizzle over top of fish )
  9. Garnish with lemon slices surronding fish
  10. Serve with cooked white rice
