Pink Chicken Recipe
One pot stovetop creation. Sounds like a strange combination, but turns out very tasty! Great with mashed potatoes or rice. My family loves it!

Ingredients
  • 1 15 oz can of diced tomatoes (i like to use the seasoned when avail.)
  • 1 can cream of mushroom soup
  • 1 pack liption onion soup mix
  • 6-8 boneless skinless chicken breasts
  • 2 cans green beans drained
  • 1 cup chicken broth + 1/2 cup water
  • salt
  • cracked pepper
  • garlic powder
  • olive oil

Directions
  1. Season chicken breasts with salt, pepper and garlic powder - set aside
  2. Preheat a 12" chicken fryer over medium high heat - add olive oil by pouring 2 turns around pan
  3. Add chicken to frying pan - cook until nicely browned
  4. Remove chicken breasts to a plate - pour out oil that remains in pan and then put pan back on stove
  5. Reduce heat to medium
  6. Pour the chicken broth & water slowly into the frying pan using a spatula to scrape the browned crumbs off the bottom of the pan
  7. Add can of mushroom soup, onion soup mixand can of tomatoes stiring to combine thoroughly
  8. Add chicken back to frying pan and also add the green beans
  9. Spoon sauce mixture over chicking to kind of smother them
  10. Increase heat to medium high until starts bubbling.
  11. Reduce heat - cover and simmer for 20 minutes stiring occasionally
  12. Serve with Mashed potatoes or over rice.
