This is a recipe for a giant Swiss hash brown. You can tell your guests you are having rosti and it will sound really posh!

Ingredients
  • 4 large potatoes
  • ! egg, slightly beaten
  • Salt
  • Freshly ground black pepper
  • Butter (for frying)

Directions
  1. Parboil potatoes in their skin 5 - 10 minutes (epends on their size- the larger they are the longer you leave them in).
  2. Allow to cool and then peel. (you can do this easily - run a fork over the potatoes. Skin will come right off.)
  3. Grate the potatoes into a large bowl (make long shreds)..
  4. Mix in a good amount of salt and freshly ground black pepper.
  5. Melt the butter in a large frying pan on a medium heat.
  6. Throw in the seasoned, shredded potatoes and shape into a large round flat cake.
  7. Cook for 5 minutes and then flip cake over (an easy way to do this is to put a plate on the top of the cake and then flip the pan while holding the plate).
  8. Put more butter on the pan and then slide the cake from the plate back onto the pan.
  9. Keep cooking and flipping until both sides are a golden brown colour.
  10. To serve:
  11. Can be eaten on it's own or with a nice large continental sausage (wurst) and mustard.

Try mixing in a small amount of minced onion before frying. It is also really tasty served with applesauce.
