Easy Corned Beef Hash

- 1 lb cooked corned beef shopping list
- 1/2 medium sized onion shopping list
- 2 medium sized leftover baked potatoes shopping list
- 4 medium or large eggs shopping list
- 3 tbs butter or olive oil shopping list
- salt and pepper to taste shopping list
How to make it
- Make sure the potatoes are cool. Grind the corned beef and onion in the food processor until a coarse grind. Heat a large skillet and add the oil or butter. Add the cold potatoes, cut up into the processor and quickly grind. Put this all in the hot skillet over medium heat. Season as needed. Watch carefully, it will burn if you are not careful. I like to make four well in the hash around a circle and add the eggs to this, turn the heat to low and cover and cook about 5 minutes and serve. YUMMY
