Spinach Carrot Cabbage Salad Recipe

Spinach Carrot Cabbage Salad Recipe
I think this is just a great idea to blend the flavors a little. You can put the dressing on and toss or just leave it on the side for each individual to serve. Either way it is very enjoyable.

Ingredients
  • Bag of baby spinach
  • Bag of shredded cabbage ( any kind of cut that you fancy)
  • Shredded carrots, as many or as few as you like
  • Mixed nuts
  • DRESSING:
  • 1/2 c. catsup
  • 1/3 c. sugar (splenda)
  • 1/3 c. canola oil
  • 1/4 c. white wine vinegar
  • 1 t. paprika ( I have smoked paprika that tastes good)
  • 2 or 3 cloves garlic ( pressed or minced )

Directions
  1. Toss the first 4 ingredients together. If I don't have mixed nuts I've used almonds, walnuts, cashews and / or pecans. I like most any nut.
  2. Mix together the rest of the ingredients. I try to remember to make the dressing in advance so the flavors meld together. I think this is fun and hope you all enjoy it as much as I do.
