How to make it

  • Preheat oven to 400 F
  • Fry garlic and onion in oil for about 2 minutes
  • Add sausage and continue to cook for about 6 minutes, until brown
  • In bowl combine cottage cheese, spinach, spices, and eggs
  • Spread about 1/2 cup of sauce on bottom of pan (13 x 9)
  • Add onion mixture to red sauce for the remaining layers
  • Layer the sauce with 3 noodles, half the cheese mixture, 1/2 mozzarella and 1/2 sauce
  • Repeat layers once
  • Top with remaining noodles, sauce and mozzarella
  • Bake uncovered for about 35 minutes
  • Let stand about 10 minutes and serve with a salad and red wine!
