Kats Spinach And Sausage Lasgane

- 12 lasagna noodles boiled about 10 minutes, not soft and drained shopping list
- 1 spanish onion, chopped shopping list
- 3 cloves garlic, crushed and chopped shopping list
- 5-10 oz Italian turkey sausages crumbled or chopped (pork will work, too) shopping list
- 16 oz low fat cottage cheese, drained (some moisture ok) shopping list
- 4 cups Fresh or about 16 ounce frozen spinach shopping list
- 2 eggs, lightly beaten shopping list
- 1 26 oz jar spaghetti sauce (can substitute any similar sauce) shopping list
- 2 Cups low fat shredded mozzarella shopping list
- 2 t garlic powder shopping list
- 3/4 T salt shopping list
- 1/2 T pepper shopping list
- 1 T italian seasoning shopping list
- 2 T oil shopping list
- Note- You can use less/more cheese or spices to your taste. I have found this is a good ratio. I tend to go easy on the cheese and heavier on the spices. shopping list
How to make it
- Preheat oven to 400 F
- Fry garlic and onion in oil for about 2 minutes
- Add sausage and continue to cook for about 6 minutes, until brown
- In bowl combine cottage cheese, spinach, spices, and eggs
- Spread about 1/2 cup of sauce on bottom of pan (13 x 9)
- Add onion mixture to red sauce for the remaining layers
- Layer the sauce with 3 noodles, half the cheese mixture, 1/2 mozzarella and 1/2 sauce
- Repeat layers once
- Top with remaining noodles, sauce and mozzarella
- Bake uncovered for about 35 minutes
- Let stand about 10 minutes and serve with a salad and red wine!
