This is an easy spinach lasagna that is very satisfying. It uses cottage cheese to cut fat and cost. Adapted it from a Golden Grain recipe. Omit the sausage for Florentine or vegetarian option.

Ingredients
  • 12 Lasagna noodles boiled about 10 minutes, not soft and drained
  • 1 Spanish onion, chopped
  • 3 cloves garlic, crushed and chopped
  • 5-10 oz Italian turkey sausages crumbled or chopped (pork will work, too)
  • 16 oz Low fat cottage cheese, drained (some moisture ok)
  • 4 cups Fresh or about 16 ounce frozen spinach
  • 2 Eggs, lightly beaten
  • 1 26 oz jar spaghetti sauce (can substitute any similar sauce)
  • 2 Cups low fat shredded mozzarella
  • 2 t Garlic powder
  • 3/4 T Salt
  • 1/2 T Pepper
  • 1 T Italian seasoning
  • 2 T Oil
  • Note- You can use less/more cheese or spices to your taste. I have found this is a good ratio. I tend to go easy on the cheese and heavier on the spices.

Directions
  1. Preheat oven to 400 F
  2. Fry garlic and onion in oil for about 2 minutes
  3. Add sausage and continue to cook for about 6 minutes, until brown
  4. In bowl combine cottage cheese, spinach, spices, and eggs
  5. Spread about 1/2 cup of sauce on bottom of pan (13 x 9)
  6. Add onion mixture to red sauce for the remaining layers
  7. Layer the sauce with 3 noodles, half the cheese mixture, 1/2 mozzarella and 1/2 sauce
  8. Repeat layers once
  9. Top with remaining noodles, sauce and mozzarella
  10. Bake uncovered for about 35 minutes
  11. Let stand about 10 minutes and serve with a salad and red wine!
