Beautiful side dish for sandwiches or bbq. Nice alternative instead of a creamy coleslaw. Crunch galore!

Ingredients
  • 1/3 cup cider vinegar
  • 1/4 cup cranberry juice, or apple juice
  • 2 tablespoons olive oil
  • 2 teaspoons poppy seeds
  • 1 large garlic clove, minced
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 lime, juiced
  • fresh ground black pepper, to taste
  • 4 cups red cabbage, finely shredded
  • 4 cups cabbage, finely shredded
  • 1 large carrot, shredded
  • 1/2 cup raisins, white

Directions
  1. Whisk the first nine ingredients together until well-blended. Toss the veggies together, toss with dressing and refrigerate. Serve in glass bowl to show off the gorgeous colors!
