How to make it

  • Make marinade by combining oil, Worcestershire sauce, balsamic vinegar, shallots and herbs.
  • Add meat to marinade and refrigerate for up to 2 hours turning occasionally then preheat oven to 450.
  • In cast iron pan sear steaks on both sides until nicely browned then place pan in preheated oven and cook for 20 minutes.
  • Remove meat from pan and keep warm.
  • Return pan to stovetop over high heat.
  • Deglaze pan with brandy.
  • Reduce heat to medium then add cream and reduce by half.
  • Add mushrooms and seasonings.
  • Heat through for 5 minutes.
