Southwest Baby Back Ribs With Chipotle BBQ Sauce Recipe

Ingredients
  • DRY RUB RECIPE....
  • 1-1/2 Tbsp. sugar
  • 2 cloves garlic, peled and crushed
  • 1-1/2 tsp. kosher salt
  • 1/2 tsp. fresh ground black pepper
  • 1Tbsp. dried oregano
  • 3/4 tsp. orange zest, chopped
  • 2 tsp. chili powder
  • 1-1/2 tsp. dry mustard
  • 1/8 tsp allspice
  • CHIPOTLE BBQ SAUCE RECIPE....
  • 1-1/2 cups ketchup
  • 2 Tbsp. brown sugar
  • 2 Tbsp. chipotle peppers in adobo sauce, chopped fine
  • 1/4 cup orange juice
  • 2 Tbsp. red wine vinegar
  • 2 racks baby back pork ribs, about 1-3/4 lbs. each
  • worcestershire sauce, to taste
  • red wine, to taste
  • oil, as needed for coating grill

Directions
  1. Preheat grill.
  2. In a small bowl, combine all dry rub ingredients, set aside.
  3. In a small saucepot, stir together all BBQ sauce ingredients and simmer over low heat for 10 minutes, set aside.
  4. Drizzle rib racks with worcestershire sauce and red wine to taste.
  5. Rub dry rub mixture onto both sides of rib racks.
  6. Reduce grill heat to low, coat grill rack with oil.
  7. Place ribs on grill and cover grill. Grill ribs slowly, flipping and rotating often,approximately 1 to 1 /12 hours or until ribs are tender.
  8. Brush both sides of ribs with BBQ sauce during the last 20 minutes of grilling.
  9. Remove from grill.
  10. Serve with sauce.
