Lamb Chops with Smoked Paprika Peanut Paste

- 6 rib lamb chops shopping list
- smoked paprika peanut paste: shopping list
- 1 tsp smoked paprika shopping list
- 1 lg garlic clove finely minced shopping list
- 1/2 tsp coarse kosher salt shopping list
- 1/8 tsp black pepper shopping list
- 1 tsp extra virgin olive oil shopping list
- 1 Tbs chunky peanut butter shopping list
- Glaze: shopping list
- red wine shopping list
- small amount of cooked sliced mushrooms as desired shopping list
How to make it
- Make a spicy paste by combining in a cup, the smoked paprika, salt, pepper, olive oil, peanut butter and garlic and stir into a paste with a fork.
- Spread paste generously on each side of the chops and cover and refrigerate several hours before preparation.
- To prepare, in a heavy duty skillet heat some olive oil or a combination of olive oil and butter over medium high heat and cook chops about 3 to 4 minutes on each side until cooked ( a bit pink in the center ).
- Remove chops and add some wine and cook and stir up browned bits in pan.
- Plate by mounding mashed potatoes in the center and surround with buttered julienne vegetables of choice around the chops.
- Drizzle sauce over potatoes and chops.
- Garnish as desired.
- I also used some sautéed mushrooms.
