Ingredients
  • 6 rib Lamb chops
  • Smoked paprika peanut paste:
  • 1 tsp smoked paprika
  • 1 lg garlic clove finely minced
  • 1/2 tsp coarse kosher salt
  • 1/8 tsp black pepper
  • 1 tsp extra virgin olive oil
  • 1 Tbs chunky peanut butter
  • Glaze:
  • red wine
  • small amount of cooked sliced mushrooms as desired

Directions
  1. Make a spicy paste by combining in a cup, the smoked paprika, salt, pepper, olive oil, peanut butter and garlic and stir into a paste with a fork.
  2. Spread paste generously on each side of the chops and cover and refrigerate several hours before preparation.
  3. To prepare, in a heavy duty skillet heat some olive oil or a combination of olive oil and butter over medium high heat and cook chops about 3 to 4 minutes on each side until cooked ( a bit pink in the center ).
  4. Remove chops and add some wine and cook and stir up browned bits in pan.
  5. Plate by mounding mashed potatoes in the center and surround with buttered julienne vegetables of choice around the chops.
  6. Drizzle sauce over potatoes and chops.
  7. Garnish as desired.
  8. I also used some sautéed mushrooms.
