How to make it

  • Make a spicy paste by combining in a cup, the smoked paprika, salt, pepper, olive oil, peanut butter and garlic and stir into a paste with a fork.
  • Spread paste generously on each side of the chops and cover and refrigerate several hours before preparation.
  • To prepare, in a heavy duty skillet heat some olive oil or a combination of olive oil and butter over medium high heat and cook chops about 3 to 4 minutes on each side until cooked ( a bit pink in the center ).
  • Remove chops and add some wine and cook and stir up browned bits in pan.
  • Plate by mounding mashed potatoes in the center and surround with buttered julienne vegetables of choice around the chops.
  • Drizzle sauce over potatoes and chops.
  • Garnish as desired.
  • I also used some sautéed mushrooms.
