This lasagna alternates spinach/ricotta cheese layers and sausage/onion/garlic tomoto layers.

Ingredients
  • 1 package of lasagna pasta
  • 3 sweet italian sausage casings removed and chopped
  • 1 1/2 jar of favorite spaghetti sauce
  • 1 small container ricotta cheese
  • 3 cups chopped baby spinach
  • 1/2 cupparmesan cheese
  • 1 ball mozzarella cheese grated
  • 1/2 finely chopped onion
  • 3 cloves of garlic chopped
  • 1 tbs dried or fresh basil
  • 2 eggs
  • 1/4 tsp red pepper flakes
  • fresh nutmeg ground

Directions
  1. prepare noodles as directed on package
  2. saute sausage with onions, garlic, red pepper flakes and 1/4 tsp of dried basil
  3. mix riccotta cheese with egg, spinach, nutmeg, and 3 tbs parmesan cheese,
  4. layer noodles in pan with sausage/spaghetti sauce/mozzarella cheese
  5. add another layer of noodles then spinach mixture continue until you have at least two layers of each and leave pasta on top
  6. sprinkle with remaining mozzarella cheese and parmesan cheese
  7. bake at 350 for 20 - 25 minutes
  8. let cool for ten minutes before serving.
