PEANUT BUTTER BRAN MUFFINS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hartford Estate in Mesquite Texas in 1991.

Ingredients
  • 1 cup flour
  • 1/3 cup brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 egg beaten
  • 1 cup milk
  • 3 tablespoons oil
  • 1 cup bran
  • 1/3 cup creamy peanut butter
  • 2 tablespoons honey

Directions
  1. Preheat oven to 400 then oil muffin tins.
  2. In bowl combine flour, sugar, baking powder, salt and soda.
  3. In another bowl blend together egg, milk and oil then stir in bran, peanut butter and honey.
  4. Let stand 5 minutes then fill muffin tins 2/3 full then bake 20 minutes and cool on rack.
