How to make it

  • Place chicken breasts in small shallow roasting pan.
  • Brush with olive oil then season with salt and pepper.
  • Roast in oven at 350 for 45 minutes.
  • Heat olive oil in small pan then add garlic and shallot and sauté 2 minutes.
  • Add tomatoes, oregano, salt, pepper and red pepper flakes.
  • Cook over high heat stirring frequently until tomatoes are pulpy about 5 minutes.
  • Stir in vinegar.
  • To serve arrange chicken on 2 plates then top each serving with a dollop of tomato sauce.
