Baked Chicken Breasts With Cherry Tomato Sauce Recipe
BAKED CHICKEN BREASTS WITH CHERRY TOMATO SAUCE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hartford Estate in Mesquite Texas in 1991.

Ingredients
  • 4 chicken breasts
  • 1 tablespoon olive oil
  • 1 garlic clove minced
  • 2 tablespoons minced shallot
  • 1 cup halved cherry tomatoes
  • 1/2 teaspoon minced fresh oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon red pepper flakes
  • 2 teaspoons red wine vinegar

Directions
  1. Place chicken breasts in small shallow roasting pan.
  2. Brush with olive oil then season with salt and pepper.
  3. Roast in oven at 350 for 45 minutes.
  4. Heat olive oil in small pan then add garlic and shallot and sauté 2 minutes.
  5. Add tomatoes, oregano, salt, pepper and red pepper flakes.
  6. Cook over high heat stirring frequently until tomatoes are pulpy about 5 minutes.
  7. Stir in vinegar.
  8. To serve arrange chicken on 2 plates then top each serving with a dollop of tomato sauce.
