Baked Chicken Breasts With Cherry Tomato Sauce

- 4 chicken breasts shopping list
- 1 tablespoon olive oil shopping list
- 1 garlic clove minced shopping list
- 2 tablespoons minced shallot shopping list
- 1 cup halved cherry tomatoes shopping list
- 1/2 teaspoon minced fresh oregano shopping list
- 1/4 teaspoon salt shopping list
- 1/8 teaspoon pepper shopping list
- 1/8 teaspoon red pepper flakes shopping list
- 2 teaspoons red wine vinegar shopping list
How to make it
- Place chicken breasts in small shallow roasting pan.
- Brush with olive oil then season with salt and pepper.
- Roast in oven at 350 for 45 minutes.
- Heat olive oil in small pan then add garlic and shallot and sauté 2 minutes.
- Add tomatoes, oregano, salt, pepper and red pepper flakes.
- Cook over high heat stirring frequently until tomatoes are pulpy about 5 minutes.
- Stir in vinegar.
- To serve arrange chicken on 2 plates then top each serving with a dollop of tomato sauce.
