How to make it

  • Place the milk and vanilla bean in a saucepan over medium heat until hot but not boiling.
  • Remove from the heat and remove the vanilla bean.
  • Place the egg yolks and sugar in a bowl and whisk until thick and pale. Slowly pour in the hot milk, whisking continuously.
  • Pour the mixture back into the saucepan and stir over low heat for 6-8 minutes or until the mixture thickens slightly.
  • Remove from the heat, stir through the bourbon and refrigerate until chilled.
  • Beat the cream in the bowl of an electric mixer until soft peaks form.
  • Gently fold the cream through the egg mixture and serve in glasses sprinkled with nutmeg.
