Cajun Blackened Halibut Recipe
We are lucky to have a ton of halibut from my hubby's fishing trip to Alaska, so we have this about twice a month. WONDERFUL. Halibut is such a mild fish, the flavors really complement it.

Ingredients
  • 4 halibut fillets
  • 1 lb. butter (this is from the original recipe - we don't do this, SO UNHEALTHY but it's delicious - we now coat our cast iron pan with olive oil instead and it works just fine.)
  • 1/2 tsp. black pepper
  • 1/2 tsp. cayenne pepper
  • 1/2 tsp. thyme
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 2 tsp. salt
  • 1/4 tsp. white pepper

Directions
  1. Melt butter over low heat.
  2. Mix seasonings together in bowl, whisking so well blended.
  3. Heat cast iron skillet in grill over indirect heat about 10 mins.
  4. Brush fish with butter and liberally sprinkle seasonings on both sides. (Note - for four fillets, we usually double or triple the seasonings, we like it spicy!)
  5. Put fish in hot skillet, drizzle with remaining butter. 1-2 minutes each side or until flaking.
