How to make it

  • Melt butter over low heat.
  • Mix seasonings together in bowl, whisking so well blended.
  • Heat cast iron skillet in grill over indirect heat about 10 mins.
  • Brush fish with butter and liberally sprinkle seasonings on both sides. (Note - for four fillets, we usually double or triple the seasonings, we like it spicy!)
  • Put fish in hot skillet, drizzle with remaining butter. 1-2 minutes each side or until flaking.
