Cajun Blackened Halibut

- 4 halibut fillets shopping list
- 1 lb. butter (this is from the original recipe - we don't do this, SO UNHEALTHY but it's delicious - we now coat our cast iron pan with olive oil instead and it works just fine.) shopping list
- 1/2 tsp. black pepper shopping list
- 1/2 tsp. cayenne pepper shopping list
- 1/2 tsp. thyme shopping list
- 1 tsp. garlic powder shopping list
- 1 tsp. onion powder shopping list
- 2 tsp. salt shopping list
- 1/4 tsp. white pepper shopping list
How to make it
- Melt butter over low heat.
- Mix seasonings together in bowl, whisking so well blended.
- Heat cast iron skillet in grill over indirect heat about 10 mins.
- Brush fish with butter and liberally sprinkle seasonings on both sides. (Note - for four fillets, we usually double or triple the seasonings, we like it spicy!)
- Put fish in hot skillet, drizzle with remaining butter. 1-2 minutes each side or until flaking.
