Smoked Ribs Recipe
Slow and low are the secrets of good barbecue ribs.

Ingredients
  • 6 pounds spare ribs (beef or pork) you choose
  • 1/4 cups brown sugar
  • 1 tbsp. salt
  • 3 tbsp. cumin
  • 1 tbsp. lemon pepper
  • 2 tbsp. paprika (a good smokey paprika would be delightful)
  • 1 1/2 cups prepared barbecue sauce
  • (or of course make your favorite)

Directions
  1. Preheat oven to 200F
  2. Mix together dry ingredients and rub over rib racks
  3. Place on a cookie sheet and bake for 2 hours
  4. Prepare mesquite chips in grill
  5. Remember you want a low fire;
  6. if you have a large grill,
  7. keep coals on one side and use other side for cooking
  8. if you have a small grill build a small fire and add a few briquettes during grilling; this will let you have a low heat but a long fire
  9. When coals are ready, grill ribs for a least 1/2 hour with top on grill
  10. If your fire is at a steady, low heat, keep the ribs on up to 1 hour
  11. Keep your vents closed
  12. You will get more flavor if smoke is trapped in grill
  13. If vents are closed entirely, the fire won't get any air and will go out
  14. If vents are open-wide, the fire may be too hot
  15. Control your vents to allow for a slow and low fire
  16. Once ribs are browned, remove top and allow fire to get a little hotter
  17. Brush with the remaining sauce........and.......
  18. Proceed to lick your fingers :>)
