These are similar to the Thai Corn Fritters I posted but they use cod, which is nice because it is so easy to find. However, you can use any kind of fish or seafood in this recipe. These are nice served with Thai mayonnaise.

Ingredients
  • 1 pound cod fillets, skinned
  • 2 tbsp. fish sauce
  • 2 red Thai chilies, seeded and very finely chopped
  • 2 cloves garlic, crushed
  • 10 lime leaves, very finely chopped or 1 tbsp. grated lime peel
  • 2 tbsp. fresh cilantro, chopped
  • 1 large egg
  • 1/4 cup flour
  • 3/4 cup green beans, very finely chopped
  • peanut oil

Directions
  1. Roughly cut the cod into bit-sized pieces.
  2. Place the pieces in a food processor with the fish sauce, chilies, garlic, lime, cilantro, egg and flour.
  3. Process until finely chopped and turn out into a large mixing bowl.
  4. Add the green beans to the cod mixture and combine.
  5. Divide the mixture into small balls. Flatten the balls between the palms of your hands to form rounds.
  6. Heat a little oil in a preheated wok or non-stick skillet and fry until both sides of the cakes are brown and crispy.
