Fish Cakes Thai Style

- 1 pound cod fillets, skinned shopping list
- 2 tbsp. fish sauce shopping list
- 2 red Thai chilies, seeded and very finely chopped shopping list
- 2 cloves garlic, crushed shopping list
- 10 lime leaves, very finely chopped or 1 tbsp. grated lime peel shopping list
- 2 tbsp. fresh cilantro, chopped shopping list
- 1 large egg shopping list
- 1/4 cup flour shopping list
- 3/4 cup green beans, very finely chopped shopping list
- peanut oil shopping list
How to make it
- Roughly cut the cod into bit-sized pieces.
- Place the pieces in a food processor with the fish sauce, chilies, garlic, lime, cilantro, egg and flour.
- Process until finely chopped and turn out into a large mixing bowl.
- Add the green beans to the cod mixture and combine.
- Divide the mixture into small balls. Flatten the balls between the palms of your hands to form rounds.
- Heat a little oil in a preheated wok or non-stick skillet and fry until both sides of the cakes are brown and crispy.
