Lemon Filling Recipe
This makes enough for 1 cake. I put it between layers of white cake. Then I frost with lemon frosting. I love this stuff!

Ingredients
  • 3/4 cup sugar
  • 3 Tbsp. corn starch
  • 1/4 tsp. salt
  • 3/4 cup milk
  • 2 Tbsp. butter
  • 1/3 cup lemon juice
  • 2 Tbsp. grated lemon rind
  • 4 to 5 drops yellow food coloring

Directions
  1. In a saucepan, mix sugar and corn starch.
  2. Blend in milk.
  3. Cook, stirring constantly until thick over low-medium heat..
  4. Remove from heat and blend in butter.
  5. Stir in lemon juice and food coloring.
  6. Chill.
