Now I love this way of eating livers- Hardly get it here in the New England. My version of a Southern style recipe I tried down South

Ingredients
  • 1 lb chicken livers
  • Batter/breading of choice or:
  • 1 cup flour
  • 1/2 cup cornmeal
  • 1 to 2 tsp of your favorite seasoning blend
  • 3 eggs fork beaten
  • 2 Tbs milk or chicken broth
  • oil to fry
  • .

Directions
  1. Clean and rinse livers.
  2. Beat eggs with liquid of choice.
  3. Combine flour, cornmeal and seasoning of choice.
  4. Place livers in egg mixture and then roll into flour mixture.
  5. Coat livers well but shake off excess.
  6. Heat oil to 365-75F until it sizzles.
  7. Drop livers into hot oil but do not crowd.
  8. Turn once when frying.
  9. Livers will be cooked well when coating has turned golden brown, several minutes on each side.
  10. Drain on absorbent paper.
  11. Serve with sautéed mushroom and onions or French fries and brown gravy.
  12. Note: increase amount of flour and cornmeal as needed.
