Joans Salsa Corn Muffins Recipe
I love anything cornbread or cornmeal and came up with this tasty recipe. ( beautiful color and unique flavor )

Ingredients
  • 1 1/2 cups yellow cornmeal, ( I prefer stone ground yellow cornmeal )
  • 2 tsp baking soda
  • 1 Tbs sugar
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 cup salsa sauce - use your favorite
  • 1 cup buttermilk
  • 1/4 cup oil

Directions
  1. In a bowl combine and mix well the dry ingredients.
  2. In another bowl combine the wet ingredients.Combine both mixture stirring only to combine and moisten .
  3. Fill lined muffin cups about 2/3 full.
  4. Bake in a preheated 375/400F oven about 20 minutes or tested done.
  5. Yield 10 to 12 regular size muffins.
  6. Serve hot or warm from the oven.
  7. Great addition for chili
  8. Note: there is no white flour in this recipe, just 100% cornmeal .
  9. I think these are great as is but you can experiment if you wish and substitute some white flour for part of the cornmeal.
