a light, refreshing, springtime or summertime cake with frosting that is light and not super sweet. easy to make!

Ingredients
  • Cake:
  • 1 box yellow cake mix
  • 4 eggs
  • 1/4 cup oil
  • 1 can mandarin oranges with juice
  • Topping:
  • 1 can crushed pineapple (drained)
  • 1 pkg instant vanilla pudding (powder)
  • 1 (12 oz) carton Cool Whip

Directions
  1. Mix cake ingredients and bake in 2 - 8" layer pans at 250 for 20 minutes or until toothpick comes out clean
  2. Let cool
  3. Mix topping ingredients and plop between layers, top and sides of cake.
  4. Refrigerate.
