How to make it

  • In a saucepot with a small amount of olive oil saute onion and then garlic to soften..
  • Add zucchini, tomatoes, parsley and cook and stir over medium heat for several minutes.
  • Reduce heat and add, sugar, salt and pepper and bouillon.
  • Cover and simmer until zucchini is almost tender.
  • Do not overcook or zucchini with be too mushy.
  • Add and stir in the peas and cover off heat a few minutes.
  • No liquid is needed since the zucchini and tomatoes produce some liquid.
  • If desired, stir in some kernel corn and canned mushrooms for more flavor and color.
