My family loves my simple dish. The dash of sugar and chicken bouillon add a wonderful flavor dimension to the garden fresh zucchini.

Ingredients
  • 3 medium tender zucchini unpeeled cut in circles, uniform thickness
  • 1 large onion cut in rings
  • 1 large clove of garlic sliced
  • 2 Tbs. fresh chopped parsley
  • 2 tomatoes coarse chopped
  • 1 tsp sugar
  • salt and fresh black pepper to taste
  • 1 tsp chicken bouillon paste or powder
  • 1/2 cup fresh frozen peas
  • Options:
  • fresh kernel corn cooked
  • canned mushrooms

Directions
  1. In a saucepot with a small amount of olive oil saute onion and then garlic to soften..
  2. Add zucchini, tomatoes, parsley and cook and stir over medium heat for several minutes.
  3. Reduce heat and add, sugar, salt and pepper and bouillon.
  4. Cover and simmer until zucchini is almost tender.
  5. Do not overcook or zucchini with be too mushy.
  6. Add and stir in the peas and cover off heat a few minutes.
  7. No liquid is needed since the zucchini and tomatoes produce some liquid.
  8. If desired, stir in some kernel corn and canned mushrooms for more flavor and color.
