Banana Chocolate Loaf Recipe
For a light dessert after dinner or just a snack with tea or coffee in the afternoon

Ingredients
  • 1/2 cup unsalted butter
  • 1 2/3 cups sugar
  • 2 eggs, lightly beaten
  • 1/8 teaspoon salt1 teaspoon vanilla
  • 1 1/2 teaspoons baking powder
  • 4 tablespoons sour cream or unflavored yogurt
  • 1 cup ripe banana mashed (2 large)
  • 2 cups all purpose flour
  • 2 cups chocolate bits
  • 3/4 cup walnuts, chopped

Directions
  1. Flour and butter one 9X5X3 inch loaf pan or use aluminum foil
  2. Preheat oven to 350 degrees
  3. Cream butter and sugar together
  4. Add half of the beaten egg, mix well, add remaining egg and salt
  5. Stir in vanilla
  6. In a seperate bowl, stir baking powder and baking soda into sour cream or yogurt. Add to butter mixture.
  7. Stir in mashed banana and flour alternating each ingredient
  8. Mix well but do not overmix
  9. Fold in chocolate bits and walnuts
  10. Pour into prepared pan and bake for approximately 90 minutes
  11. Cool in pan 20 minutes, remove and place on a wire rack
