Biscotti Cookie

- 2 sticks unsalted butter shopping list
- 1 1/2 cups sugar shopping list
- 6 large eggs (room temperature) shopping list
- 4 teaspoons pure anise extract shopping list
- 1 cup of pecans shopping list
- 4 cups flour shopping list
- 3 teaspoons baking powder shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon vanilla shopping list
How to make it
- Preheat oven to 350 degrees
- Spray two cookie sheets with Pam or simular product
- Cream butter, after 1 1/2 minutes slowly add sugar
- Add eggs one at a time beating each 45 seconds to a minute
- Add anise extract and vanilla
- Add chopped pecans
- In a seperate bowl whisk flour, baking soda, and salt
- Gradually add dry ingredients to prepared mixture above
- When reaching close to a "dough" stage put mixture on a floured surface and continue to add a little more flour to thicken texture
- Seperate dough in half and form two "loaves" (approx 12"X6") placing each one on the two cookie sheets
- Set in middle of oven for about 30 minutes rotating cookie sheet halfway through, watch for a light golden appearance
- Remove from oven and place on a wire rack, turn oven temperature up to 400 degrees, after cooling for about 15 minutes, carefully remove loaf with spatula and place on wooden cutting board
- Cut loaf in half lengthwise then cut each half widthwise in "sticks" about an inch apart
- Place "sticks" back on the cookie sheet on their sides and bake again for about 8 to 10 minutes and then turn the cookies over and place back in oven for another 6 to 8 minutes until they begin to appear lightly golden
- Remove, place pan on wire rack to cool for about ten minutes and place cookies on a wire rack.
- Watch carefully, oven temperatures vary,this is too much work to have them "burn"
