This recipe came from a northern Italy family going back 4 generations It is a lot of work but well worth it....

Ingredients
  • 2 sticks unsalted butter
  • 1 1/2 cups sugar
  • 6 large eggs (room temperature)
  • 4 teaspoons pure anise extract
  • 1 cup of pecans
  • 4 cups flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla

Directions
  1. Preheat oven to 350 degrees
  2. Spray two cookie sheets with Pam or simular product
  3. Cream butter, after 1 1/2 minutes slowly add sugar
  4. Add eggs one at a time beating each 45 seconds to a minute
  5. Add anise extract and vanilla
  6. Add chopped pecans
  7. In a seperate bowl whisk flour, baking soda, and salt
  8. Gradually add dry ingredients to prepared mixture above
  9. When reaching close to a "dough" stage put mixture on a floured surface and continue to add a little more flour to thicken texture
  10. Seperate dough in half and form two "loaves" (approx 12"X6") placing each one on the two cookie sheets
  11. Set in middle of oven for about 30 minutes rotating cookie sheet halfway through, watch for a light golden appearance
  12. Remove from oven and place on a wire rack, turn oven temperature up to 400 degrees, after cooling for about 15 minutes, carefully remove loaf with spatula and place on wooden cutting board
  13. Cut loaf in half lengthwise then cut each half widthwise in "sticks" about an inch apart
  14. Place "sticks" back on the cookie sheet on their sides and bake again for about 8 to 10 minutes and then turn the cookies over and place back in oven for another 6 to 8 minutes until they begin to appear lightly golden
  15. Remove, place pan on wire rack to cool for about ten minutes and place cookies on a wire rack.
  16. Watch carefully, oven temperatures vary,this is too much work to have them "burn"
